Rainbow Cupcakes

A couple of weeks ago an old friend of mine, Emily Anderson, made some rainbow cupcakes and posted her efforts on Facebook. I thought it looked like a fun activity to do with the girls and so I asked her for the recipe. While they had fun mixing up the batter and colors it wasn't really a very kid friendly project after all. It took me close to 2 hours to get 14 cupcakes made with all the layering of the colors. I think if I did this again I would either let the girls choose one or two colors to dump together or just make several cupcakes of each cupcake (instead of each cupcake having every color). So, while these were fun and yummy I don't think I'm likely to try the recipe exactly as written again. :)

Kennedy and Reagan working together to put the cupcake papers in the pans
Reagan pouring in the oil all by herself (quite a bit was spilled on the counter, but hey that's okay because we're learning, right?:)
Kennedy adding the water all by herself (about half of it went all over the counter too but again we're learning :)
Dumping in the mix together - what a team!!!
Kennedy had to stop and cheer for their efforts, she clapped and said "Yay!"
Kennedy mixing the batter all by herself
Reagan doing a great job mixing the batter too - I loved how intently Kennedy watched Reagan while she worked! :)
One of the girls favorite parts of baking is to lick the beaters - yummy!
The girls were very helpful in creating all 6 colors of batter that were required
One of the best parts of this recipe was that it gave us directions on what porportions of colors to use to create our rainbow colors. I thought it gave us some really pretty colors. I'm excited to have this because I usually just mix until it looks okay and these are so pretty and bright!
While I was busy creating our rainbow cupcakes (which took forever!!!) the girls colored, had snacks, watched cartoons and were super good co-operaters. I kept smelling grape, however, and couldn't figure out why. Then Kennedy walked up next to me and started saying "Messy, messy." I looked down and what a mess she was! She had gotten into Reagan's princess lipgloss and used it all up all over her face and hands. I had one grape little girl! lol :) She was not happy with me for taking the time to take a picture instead of cleaning her up right away but I figured for the mess she had made it was the least she could do for me, right? :)
The girls decided to enjoy a banana snack together on one of the stools they had been using to help mix the batter - so sweet! :)
The finished product - pretty cool, huh?
I didn't end up with quite the same amount of batter for each color so I created some additional randomly colored cupcakes. This was the only special one as it was a Green Bay Packer inspired cupcake especially for Aunt Arla and Uncle Scott. Just wish they could have been here to enjoy it with us! :)
Kennedy enjoying her yummy cupcake creations. :) I was also trying to catch her "Mmmm" and rubbing of the chest (vs. belly) she has started to do anytime she thinks something tastes good. So cute and funny! lol :)
Thanks for the great idea Emily! :) Next time warn me if I ask you about a project that's going to take the whole day though. lol ;)

Thank you also to Grandma for the very colorful rainbow dresses that I thought were perfect for making raindbow cupcakes! :)
